Kwik Roasted Spicy Potato and Cauliflower

Almost every Indian family I know has a variation on this basic Alu-Gobi (Potato and Cauliflower) side. On this week night when I had about 5 other things to do, I’d just popped wings in the oven and wasn’t thrilled about having to spend another 10 minutes cooking my veggies on the stove top so I decided to pop it in the oven with the wings. I’ve never gone back to making it on the stove top.

Prep time: 5 minutes | Total time: 20 minutes | Servings: 4

What you need:

  • 4 Medium size Potatoes diced (skin on or off) about roughly 1 inch pieces (Red or Russet)
  • 1 Cauliflower cut into small florets
  • 2 tablespoons of Cooking oil
  • 1 teaspoon of Coriander powder
  • 1\3 teaspoon Cayenne pepper
  • 1\2 teaspoon Cumin seeds
  • 1\2 teaspoon black Mustard seeds
  • Salt to taste
  • 1 tablespoon chopped Cilantro

Making it:

  1. Preheat oven to 375 degrees.
  2. Place potatoes and cauliflower florets on a large cookie sheet or baking tray.
  3. Add all spices and salt, drizzle oil. Mix well so veggies are coated well.
  4. Pop in the oven for about 15 minutes or less depending on how crisp and brown or soft you like your veggies.
  5. Sprinkle chopped cilantro and serve.

    Aaaah, will try this next time alu-gobi’s on the menu. Seems easy and you can bung it in and forget about it instead of standing and stirring!
