Calling it a night with crunchy trout and succulent spinach

When I’ve been used up a bit more than usual by the day that was and I’m ready for a simple, early meal before crawling gratefully into bed, a quick Trout-Spinach supper is just the ticket. Nothing fries as fast as fish, I toss the fish in buttermilk as soon as I get in and its ready to fry by the time I’ve treated myself to a hot shower and made my way back to the kitchen. Takes minutes to pull the spinach together, steam some corn or throw in a baked potato and I can call it a night.

Start-the-Weekend-Right Pan Fried Rainbow Trout

Would I love to wake up to a meal that looks like this every day of the week! But that’s not going to happen any time soon, I barely have time to crack an egg on week day mornings. Plus, I’m not really a morning person. But weekends are a whole different plate of fish. One has to do weekend breakfasts right. Right?

Sammie likes fish for breakfast and I’m not exactly from a wake-up-to-kippers part of the world, the British influence had its limits. It took me a minute to get used to the idea of fish for breakfast and I rather enjoy it now. Oily fish that taste and smell a bit too fishy were out for breakfast. So we finally settled on rainbow trout as the perfect breakfast fish for us. This skillet fried trout should be just as good for a quick weeknight dinner with robust  vegetable sides and maybe a little buttery sauce for the fish.
