Fill you up and cool you down curried chicken salad

Temperatures are holding steady at above 90°F (30°C) day after day, broken up occasionally by torrential but all too brief summer showers that push humidity levels up from tolerable to unbearable. Taking more than 15 minutes to cook a meal is quite simply a gargantuan effort. Quick foods are the  order of the day. Quick, filling, flavorful and most importantly cooling! This salad is best when made ahead of time and refrigerated overnight.

Back-to-Basics Mediterranean Salad

Temperatures have been dipping and my taste for the cold and juicy is giving way to a taste for warm sweet potatoes, lamb rib soup, pot pies and stews. So this is probably my last stab at really cold cucumber and tomato for the year. It is labeled a “Greek Salad” in America but since we are sure the Greeks make hundreds of wonderful salads that some of us haven’t discovered, we won’t reduce it to a blanket Greek Salad. After the numerous times I’ve had to explain that “curry” is far from a singular, universally recognized dish across India or South Asia I ought to have learned something, right? So let’s just say that this is how I like the American version of one of the most popular of Greek salads we know.

Cooling Cucumber and Tomato Salad

This is a ridiculously easy, refreshing summer time salad and it takes less than three minutes to throw together. I’m sure this doesn’t really qualify as a recipe but like a lot of the simplest fare it tastes delicious when made with fresh ingredients. It’s the kind of cooling salad that I’m still reaching for as the summer heat, though waning, still lingers. I also think this salad tastes better when eaten outdoors but that may just be me.
