My astrological prediction for January 2011 could have been summed up in a sentence. “Busy until interrupted by a snowstorm before returning to hectic.” The trend continues in February and  my backlog of “intended” posts from over the holidays is piling up like the cold white stuff piling up further North. Cuban Inspired Slow Cooked Black Beans

This turned out to be the best batch of black beans I’ve made so far and thanks to this blog I won’t forget the exact recipe. Sammie (hottie-in-residence aka husband) loves black bean and most of this  batch was gone in one sitting when there should have been left overs. This one’s a keeper. Besides, black beans are a great source of protein, dietary fiber and folate.

Classic Fare – New Orleans Style Red Beans and Rice

My personal, resident food critic had a hankering for this tried and true Louisiana classic. He challenged me, which is in keeping with a seven year old tradition, by suggesting I couldn’t possibly make a decent batch of New Orleans Red Beans and Rice, what could a little East Indian gal know about Cajun food? So I had to respond with my take on this slow cooking laundry day classic and it quickly turned into one of his favorite Friday foods.
